Eat, Drink and Give Thanks
For the last ten years or so, my son and his wife have been out of town on Thanksgiving Day. It’s always the first snocross race weekend of the season, several hours away. This year we decided to celebrate on Wednesday with an untraditional meal. We would share the holiday meal together with prime rib.
I’ve never made prime rib before, but read some recipes and it looked simple enough. I decided to order the roast from a well-known country meat market. It was where my Dad always ordered his meat for special occasions. I called to place my order, including the number of people I would serve; a total of four.
They suggested a six pound roast to feed four, and I thought it would be expensive, but once I figured out the cost, prior to finalizing my order, it seemed reasonable. However, when I picked the prime rib roast up, I had completely figured it wrong by almost half……YIKES! For that price I better not mess this one up.
We had planned on eating around 7:00 PM; the recipe called for the roast to cook for five minutes per pound at 500 degrees, then keep it in the oven for two additional hours, without opening the door. It gave me enough time to prepare the remaining of the meal, have a few appetizers, a drink and fun conversation. I love spending time with my grown children.
As the two-hour timer sounded, wonderful aromas filled the air and it was time to see how the first-time prime rib maker did. As the meat was carved, it looked like it was cooked a darn near perfect medium-rare. My daughter gave each of us a small taste in anticipation of the meal. It was flavorful and delicious.
Then bowed our heads in prayer, and we shared a beautiful untraditional Thanksgiving meal to celebrate giving thanks for all that we have. To eat, drink and give thanks with those you love is what the holiday is all about. How will you spend this Thanksgiving with your loved ones?
